Birth and history
Danny, could you tell us the history of your premises?
Our historic location is called Van Gourmet Emilia, while our dessert shop is called Dolce Dea. Van Gourmet opened in 2020, right at a time of global challenges. Dolce Dea, on the other hand, opened this year. We took a gamble: we wanted to offer something different in the street food scene. In addition to the usual Sicilian cannoli and bomboloni, we decided to offer bubble wrap, crepes, single-serving desserts, and semifreddo. My wife, Corinna, also specializes in birthday cakes. We're a close-knit team: my wife, me, and the occasional two helpers. Our business is 99% mobile, operating in various locations across northern Italy and also participating in private events.

Danny, what three adjectives would you use to describe your business?
"Itinerant, innovative, and high-quality. We're always on the move, bringing our cuisine to new locations. We're constantly innovating our menus and always focus on quality products."

The meeting with Techfood
How did you hear about Techfood?
"We discovered Techfood almost by chance at the Sigep fair in Rimini. We were looking for a completely different product when we discovered the Bubble Stick , which became our flagship."

Which Techfood products do you use and what do you like most about them?
We mainly use Bubble Stick, and starting next weekend, we'll also start using Rondò Complex to make crepes. As the name suggests, Dolce Dea focuses on sweet treats, but in the future, we'll also consider introducing savory crepe-based dishes. What we appreciate most about Techfood products is their quality and ease of use, which allows us to maintain high production standards even in a mobile environment.

What do you prepare with Techfood equipment?
"We prepare sweet Bubble Sticks with various fillings. The most popular flavors are pistachio, hazelnut cream, and white chocolate. As mentioned earlier, with the Rondò 30, we will also start making crepes, expanding our sweet offerings."
The Secret of Success
In your opinion, what is the secret to a successful venue?
The secret is the quality of the products used. Even if you're traveling, people remember quality. The aesthetics and cleanliness of the van are crucial: appearance also counts. We focus on quality, not on being cheap. We have customers who follow us from all over the world: from Pavullo to Carpi, to Peschiera del Garda. They seek out our pork shank sandwich made by Van Gourmet Emilia, and it's important to us that our brand is synonymous with excellence. We try to always have the two vans in pairs, for logistical and cost reasons. However, the main goal is to avoid too much competition between us.
